I thought since this is my first time as a contributor to MWOA, I’d let you in on a little family secret. Only right since we’re family now, right? Thanksgiving is just a few short weeks away and for me, Thanksgiving just isn’t Thanksgiving with Cranberry Fluffy Stuff. Well, that’s what we call it in our family, but for the sake of the internet (and Pinterest) we’ll call it Fluffy Cranberry Pineapple Salad. This side dish has been passed down to me from my mom and I’m pretty sure it was one of those recipes found in a magazine and then slowly over time took on a life of it’s own. I’m pretty sure most of our moms have recipes like that!
Fluffy Cranberry Pineapple Salad is a 2 day process kind of recipe, so plan accordingly. However, it is great for make ahead prep on holidays!
Ingredients:

1 Package of Whole Cranberries

1/2 Cup Sugar

1 8oz Whipping Cream

1 Small Can Crushed Pineapple

1 Jar Marshmallow Whip
Directions:

In a food processor pulse cranberries and sugar together until chunkily combined. About the consistency of thick salsa. Let sit over night in the fridge covered. If you’re pressed for time 2-4 hours in the fridge will work too.

Next day, add 1 jar of marshmallow whip, 1 can of drained crushed pineapple. Sometimes that marshmallow can be a little tough to work with, just use a little muscle.

In a separate bowl, whip cream to form soft peaks.

Fold whipping cream into cranberry mixture (lick the bowl, beater and spoon) and chill for 1 hour then serve.

Oh my gravy! I’ve never known anyone else who ate this. We call it Cranberry Salad in our family and it’s just not Thanksgiving without it. And yes, it’s the best breakfast ever. Those carbs totally will sustain you while decorating the tree the next day.
