This Churro Ice Cream Sandwich brings you right back to Sleepy Hollow at Disney World. It is full of cinnamon and sugar and filled with Breyer’s Vanilla Ice Cream! This is a treat you will not want to miss out on.
Any time we head to Disney there is one treat we ALWAYS have to get. The Churro Ice Cream Sandwich at Sleep Hollow is absolutely amazing. It is the perfect combination of a warm churro with vanilla bean ice cream. If you have not tried, you cannot go to Disney again and pass it up!
How do you make Churros?
Churros are a famous Mexican pastry treat and they are much easier to make than you may realize. It is a cinnamon sugar dough that is fried and covered in even more cinnamon and sugar. It is delicious!
Today’s recipe for Churro Ice Cream Sandwiches comes directly from the Happiest Place on Earth, Walt Disney World! Like I mentioned, there is not a churro out there better than one at Disney. Being such good fans of the real deal, we had to try this one at home!
Churro Ingredients
Here are the ingredients you will need to make Churro Ice Cream Sandwiches-
- water
- butter
- salt
- flour
- cinnamon
- sugar
- vanilla
- vegetable oil
- Breyer’s Vanilla Ice Cream
- more cinnamon and sugar!
In a medium sauce pan, add water, butter, 1/4 tsp cinnamon and salt. Bring to a rolling boil and then reduce to low heat. Add flour to mixture and combine to create a dough ball. Remove from heat and let cool.
After cooling, add eggs one at a time and combine.
Using a star tip piping bag, add mixture to bag and pipe in a circular motion creating a “churro cookie”. Place on parchment lined cookie sheet. Repeat until you run out of dough! Place in freezer for 10-15 minutes.
Fill a heavy bottomed pot with 1 1/2 cups vegetable oil. Heat on medium heat to 350 degrees.
While the oil is heating, mix cinnamon and sugar in a shallow bowl to top cooked churros with later.
Remove churros from the freezer. Gently add churros to the heated oil cooking on each side for 2-3 minutes each. Make sure there is enough room for churros to cook through evenly. Remove with slotted spoon and place on paper towel. While still warm, roll in cinnamon and sugar mixture!
Top with Breyer’s Vanilla Bean Ice Cream then with another churro!
Serve and enjoy!
Recipe Notes
Shape: Traditionally churros are made in a straight shape. You can definitely use this recipe to make traditional churros as well. Using a star tip on the piping bag will help you to get the traditional churro shape.
Cooking time and Temperature: Make sure that your oil is the perfect temperature. I found that 350-360 degrees is best. If it is too hot, your dough will burn on the outside and be raw on the inside. Also, make sure that you do not put too many churros in at a time. You want to leave plenty of space for cooking. Also, if you put too many in the temperature could drop.
Dipping Sauce: If making traditional churros, try them with dipping sauces. My favorite dips are chocolate and caramel. OMG I want some now!

- 1 teaspoon cinnamon divided

Instructions
