Mornings at the beginning of the school year are the worst! Trying to get kiddos back in a regular routine and out the door on time is nearly impossible, trying to get them fed a decent breakfast is impossible. I always have grand plans of waking up and making my family a fabulous breakfast to start the day but even though the good intention is there with all of the chaos, it just doesn’t happen.
This year I started early, like really early and I made 5 make ahead back to school breakfast recipes. I whipped up all of these delicious recipes, threw them in the freezer and now all I have to do is remember to pull them out and pop them in the microwave. Fingers crossed I can at least get that done!
Moms, these recipes are easy to make and all are a hit with the kids. Having these make ahead breakfast recipes ready to go is definitely going to make like much easier!
#1 Pigs-in-a-Blanket
Ingredients: 1 can junior flaky biscuits, lil smokies
Instructions: Preheat oven to 350. Cut the biscuits in half, lay a lil smoky inside and close the biscuit around it. Line pigs-in-a-blanket on a cookie sheet and bake for 12 min or until the biscuit is golden.
Freezing Instructions: Wrap pigs-in-a-blanket in freezer wrap, insert into gallon size bag, seal and freeze. Eat within 1 month.
#2 Chocolate Chip Pancake Muffins
Ingredients: 2 cups pancake mix, 2 eggs, 2/3 cups milk, 1/2 cup maple syrup, chocolate chips
Instructions: Preheat oven to 350. Combine mix, eggs, milk and syrup and whisk together until combined well. Pour 1/3 cup into each cup in lined cupcake pan. Drop chocolate chips in. Bake for 10-12 minutes or until you can poke with a toothpick and the toothpick is clean.
Freezer Instructions: Wrap each muffin in freezer wrap individually. Insert all muffins into a freezer bag and freeze. Eat within 1 month.
#3 Homemade Chocolate Chip Granola Bars

Freezer Instructions: Wrap individually in freezer wrap, insert into freezer bag, put in freezer. Eat within 2 months.
#4 Sausage, Egg, Potato and Cheese Fritattas
Ingredients: 12 eggs, 1 cup cooked and crumbled breakfast sausage, 1/2 cup shredded cheddar cheese, 1 cup shredded hashbrowns
Instructions: Preheat oven to 400. Scramble eggs set aside. Brown sausage set aside. Brown potatoes set aside. Grease cupcake pan. Layer each ingredient hashbrowns, sausage, cheese and then 2 tablespoons of egg. Fill with egg until level. Bake for 12 minutes or until eggs are firm.
Freezer Instructions: Wrap each fritatta in freezer wrap, insert into freezer bag, freeze. Eat within 1 month.
#5 Breakfast Tacos
Ingredients: 10 Tortillas, 12 eggs, breakfast sausage, eggs, shredded cheese
Instructions: scramble and cook eggs to liking, cook breakfast sausage. Assemble tacos with all ingredients.
Freezer Instructions: Wrap tacos individually in freezer wrap. Insert all tacos into gallon ziploc. Freeze. Eat within 1 month.
You guys, I am never this prepared and I could just not be more proud of myself! My kids are already asking to gobble these goodies up.
